Sister Act Farmhouse IPA was brewed using three powerhouse Australian sister hop cultivars; Galaxy, Enigma and Eclipse. Using 100% Voyager Craft Malts, we brewed a base IPA hopped heavily in both whirlpool and dry hop additions. Expect notes of fermented pineapple, overripe fruit, passionfruit, resin and citrus rind. It’s loud, funky and assertively bitter with a mildly acidic, dry finish.

Staying true to the Bunker ethos we brewed this beer as a unique mixed culture expression of Australian three powerhouse hop sisters; Galaxy, Enigma and Eclipse. Each of these unique cultivars share the same parentage and represent a truly remarkable achievement in hop breeding. For a single breeding to produce three cultivars with such high quality, unique and powerful characteristics is quite something. Despite the shared parentage, these ladies are all very much individuals in their aromatic and flavour expressions. Displaying everything from Passionfruit to Mandarin to Gooseberry, all with a healthy dose of bold, aggressively tropical characteristics that personify modern Australian aroma hops.

Using malts exclusively from Voyager Craft Malt, we brewed a base IPA wort utlising heavy handed late kettle additions. The wort was cooled and transported to the Ballistic Bunker and transferred onto fermenter for primary fermentation with Saccharomyces Bruxellensis Trois before an additional three Brettanomyces strains (WLP645, TYB415 and TYB261) were pitched after primary fermentation had slowed. Once the fermentation stabilised we double dry hopped the beer with hefty doses of Galaxy, Enigma and Eclipse and packaged the beer shortly after to retain as much aromatic hop characteristics as possible.

The result is a tropical and funky brett driven IPA. Bold hop characterises present bright notes of passionfruit, citrus rind, pine and deep berry present alongside a fermentation profile the exhibits deep fermented fruity, tropical esters, moderate funk and mild phenolics. Assertively bitter with a mildly acidic, dry finish.
